Changes in Nutrient Content for β-Carotene, Iron and Zinc in Solar Dried and Stored Amaranthus cruentus Vegetables

چکیده
There is increasing need to store the nutrient rich amaranth leaves which are plenty during the wet season for use in dry season, but there is little information on the micronutrient stability on storage of vegetables produced in dry areas meant to bridge the seasonal gap. The stored dry leaves can be utilized during dry season by mixing them with cereal flours for making porridge for children under five who are vulnerable to micronutrient deficiency. The aim was to assess the changes in nutrient content of solar dried amaranth leaves within nine months of storage at ambient condition for the purpose of bridging the seasonal gap. Amaranth leaves were solar dried and ground into powder and stored for nine months. Regular testing of nutrients retention (β-carotene, iron and zinc) was done after every three months. The content of β carotene was established using UV–VIS Spectrophotoscopy method while for iron and zinc analysis atomic absorption spectophotometry. Results showed that the mean losses of nutrients was 3.7±0.04, 1.4±0.03 and 0.69±0.04 for β-carotene, iron and zinc which translated to a percentage loss of 9.1%, 2.0% and 2.8%, respectively after nine months storage. The study noted no significant change (P>0.05) in the nutritional contents of βcarotene, iron and zinc. The concentration of β-carotene, iron and zinc remained relatively stable as shown by small fluctuations of nutrients. Dried amaranth leaves retain adequate nutrients when stored for nine months and thus can fill the seasonal gap.

Effect of processing methods on the nutritional content of three traditional vegetables leaves: Amaranth, black nightshade and jute mallow
The study assessed changes in nutritional content of some commonly consumed traditional vegetables subjected to postharvest processes. Amaranth (Amaranthus cruentus L.), black nightshade (Solanum scabrum Mill.) and jute mallow (Corchorus olitorius L.) leaves used as vegetables were subjected to blanching, boiling and drying. The proximate composition and β-carotene content of fresh and processe...

The effects of various processing methods on the proximate composition and dieting of Amaranthus hybridus and Amaranthus cruentus from West Cameroon were investigated in this study. Both amaranths leaves were subjected to same treatments (sun-dried and unsliced, sliced and cooked), milled, and analysed for their mineral and proximate composition. متن کاملβ-carotene losses due to handling and cooking in Kenyan leafy vegetables connote no comparative nutritional superiority over kales.
African leafy vegetables (ALVs) are known to be high in β-carotene content and are preferred over kales due to this nutritional superiority. Ten different vegetables were collected from farm and market locations and analyzed for β-carotene content. Cooked vegetables (in single or in combination) as well as solar dried samples were prepared by the community members in the study area in the usual...
متن کاملInvestigating the Changes in β-Carotene concentrations of Carrot and Sweet Corn Using Different Methods of Heat Treatments
Carotenoids are red, orange and yellow pigments, which are widely distributed in fruit and vegetables. The aim of this research is to investigate the effect of conventional, high pressure and microwave cooking on the concentrations of β-carotene in carrot and sweet corn. Raw carrots were washed, peeled and diced to a uniform size and then frozen at -70°C. Sweet corn was also provided in a simil...
متن کاملContribution of selected wild and cultivated leafy vegetables from South India to lutein and beta-carotene intake.
Carotenoids, especially lutein and beta-carotene, offer benefits to human health in general and to eye health in particular. However, more data on the contribution of plant foods to carotenoid intake is of importance for developing strategies for promoting eye health in regions where cataract is highly prevalent such as in South India. The most frequently consumed 5 uncultivated and 5 commercia...
